Preserving Durians flesh all the year round! Yes, that's what I am going to share with you. This secret has been passed down from my Nyonya grandmother.

Durians make lovely and excellent desserts and cakes like Apam Balik, cup cakes, Pengat Durian, Cendol Durian and even Ondeh-Ondeh Durian! It's all up to your creativity of creating new cakes and desserts!

However, since Durian is a seasonal fruit; you might face some problem of obtaining the fruit all year round and it could be very pricey too! That's why my grandmother, Mama comes out with a creative way of preserving this fruit for her durian based Nyonya desserts and cakes.

Let me share with you the simple method. The ingredients that you need are:

  1. Gula Melaka
  2. Daun Pandan (optional)
  3. Durians.....lots of Durians....

Preparing Methods/ Steps:

  1. First, boil Gula Melaka in a pot using slow fire and stir it. Only add in little water. You could add in Daun Pandan if you wish.
  2. Then, remove the durian flesh from the seed and put it into the Gula Melaka pot.
  3. Stir and mix the durian with the Gula Melaka using slow fire. Cook until it thickens.
  4. Cool the mixture and later put into a bottle container and keep it refridgerated.

Isn't it easy?

In science we learn that you either use sugar or salt as traditional food preservatives. In this scenario my Mama uses Gula Melaka to preserve durians for making cakes and dessert while she uses salt to make delicious Tempoyak Durian. (appetizer side dish).
